Manganese is one of the trace minerals, which means only a small amount of it is required in the diet to ensure good health.

Manganese levels are the highest in the pituitary gland, liver, pancreas, kidneys and bones.

Manganese may be depleted in the soil by extensive use of chemical fertilisers or if too much lime is used and food grown in such soil will have a much lower manganese content than food grown in soil using organic growing methods.

When flour is over-processed and over-milled, then a lot of the manganese in the wheat (or other grain produce) can become depleted and the food then contains much less manganese than food produced organically without a high amount of processing.
